Hygiène et sécurité Vous devrez être en mesure d'appliquer la technique HACCP (Hazard Analysis Critical Control Point) si vous gérez un restaurant dans le département de Loire-Atlantique ou si vous souhaitez devenir restaurateur et acheter un établissement recevant du public.
Cette méthode, d'origine américaine, a été réorganisée sous la norme ISO 22000 en 2005 et est devenue obligatoire dans tous les pays membres de l'Union européenne et sur tout le territoire français en 1993.
L'utilisation de cette technique HACCP vous permettra de gérer précisément la sécurité de vos aliments et autres produits afin d'éliminer tout risque d'intoxication alimentaire, qui peut parfois entraîner des maladies graves, voire la mort du client.
Depuis de nombreuses années, l'Hotellerie-Restaurant met l'accent sur la formation HACCP. Le contenu de la formation

La formation HACCP est incontournable, car elle permet aux professionnels de la restauration de respecter les principales règles d'hygiène, ils apprennent aussi les techniques utiles à la mise en œuvre de la méthode HACCP.
Au cours de la formation HACCP, dont le programme est basé sur la maîtrise de la sécurité alimentaire et des CCP, les participants seront formés à différentes notions :
Les bonnes pratiques d'hygiène générale
La microbiologie des aliments L'hygiène et la manipulation des denrées alimentaires
La qualité des matières premières
Les conditions de préparation
Le nettoyage et la désinfection La durée limite de la consommation des produits alimentaires
